Strawberry Pancakes Recipe

Strawberry pancakes are another uncommon type of pancakes that most people don’t think of. I have seen people put strawberries on their pancakes or use strawberry syrup, but I never new how to make strawberry pancakes with strawberries right in the pancakes themselves.

Of course, it turns out it’s a pretty easy thing to do. You don’t even need a super special recipe for strawberry pancakes in order to make delicious, homemade strawberry pancakes from scratch. It’s a simple process.

I always start with a basic pancake recipe. This means you don’t have to experiment with a whole new recipe if you already tried this basic recipe. One tweak I like to make with this recipe is to add 2 extra teaspoons of vanilla extract. Strawberries go great with the extra vanilla flavor. You can also add the fruit to a pancake mix recipe, too.

Next, slice up about a cup of fresh strawberries. You could use frozen strawberries that have been defrosted, but it won’t taste as good and it might make the batter runny. Also, you can chop the strawberries or mash them a bit if you prefer to have more strawberry flavor than chunks.

Add the strawberries to an already prepared bowl of pancake batter. Fold them in. Do not stir vigorously as this will do more damage than good. If you chose to mash up the strawberries, mix them in with the wet ingredients and then mix the wet and dry together. This will make sure that the strawberries are mixed in well without resulting in tough, chewy pancakes from over-mixing.

Cook the batter by about 1/4 cup on a lightly greased griddle at medium high heat. You may find that it may take about 30 to 60 seconds longer to cook completely so that the strawberries are warmed through. If you chose to mash the strawberries, the batter may be thinner, too.

Let the pancakes cook until tiny bubbles form, then flip and cook for about the same length of time on the other side. Both sides should be golden brown.

Serving your Strawberry Pancakes

When I think of strawberry desserts, I think light and fluffy. That is why I like to serve my strawberry pancakes with a dusting of powdered sugar, a few extra sliced fresh strawberries and fresh whipped cream.

You can serve them as you would any other pancakes with butter and syrup, too, but it will be very sweet. Feel free to drizzle some melted chocolate over the pancakes in lieu of maple syrup for “chocolate covered strawberry pancakes”. Real chocolate covered strawberries are a perfect companion to this dish as well.

If you’re feeling particularly light and summery, dress up the pancakes with lots of fresh sliced fruit. Top a stack of pancakes with half a cup of fruit salad and some whipped cream for breakfast or dessert.

Strawberry pancakes are perfect for the early summer when strawberries are in season. They are extra juicy and sweet resulting in extra delicious pancakes.
